Recipe: Gluten Free Graham Cracker Crust

I searched high and low for a gluten free graham cracker crust that actually had graham crackers (gluten free) in them!  Believe it or not, it was not easy… most recipes I see online use rice bran or corn flakes.  That may be very good, but I want a graham cracker crust, not an imitation!  Believe it or not, this recipe is simple and basically just substitutes regular graham crackers with gluten free graham crackers.

Ingredients:

1 1/4 cups crushed gluten free graham crackers (I used Josef’s).

5 tablespoons of butter (melted).

1/4 cup sugar.

Combine crushed graham crackers with melted butter and sugar.  The mixture should be crumbly.  Work mixture into a 9 inch round pie pan.  Chill the crust in the refrigerator for 10 minutes.  Fill with your favorite gluten free filling.  We like to make Jell-O pies.

To make a Jello-O pie, prepare Jell-O mixture as directed on the package.  Cool briefly, but do not let the mixture congeal.  Add 1 tub of Cool Whip to the jello mixture.  Pour mixture into the gluten free graham cracker crust.  Put pie into refrigerator until congealed.
