Recipe: Gluten Free Peachy Shrimp Tacos
1 jar gluten free salsa
1 c. frozen unsweetened sliced peaches, thawed and diced
1 lb. cooked medium shrimp, peeled and deveined
1 Tbs. fresh cilantro, minced
1 1/2 c. Chinese or Napa cabbage, shredded
6 Mission white corn tortillas, warmed
Directions
In a large skillet, combine salsa and peaches over medium heat until warmed. Add shrimp and cilantro; cook and stir until heated through. Place 1/4 c. cabbage down the center of each tortilla; top with 1/2 c. shrimp mixture and serve.
