Recipe: Gluten Free Turkey Salad

We find this to be a great dish for a quick dinner or to bring for lunch during the week! Enjoy!

Ingredients

3 Tbs. low-fat plain yogurt
3 Tbs. orange marmalade
4 1/2 tsp. reduced fat mayonnaise
2 tsp. lemon juice
Coarse salt & fresh ground pepper to taste
2 c. cooked turkey breast, cubed
2 medium peaches, sliced
1 1/4 c. fresh blueberries
2 large lettuce leaves
1/4 c. chopped walnuts, toasted

Directions

In a large bowl, mix together the first five ingredients. Stir in the turkey, peaches and blueberries. Toast the walnuts in a skillet over medium-high heat for 3 to 5 minutes, stirring frequently so that they do not burn. Serve the turkey salad on lettuce leaves and sprinkle with toasted walnuts
