Gluten Free Recipe: Gluten Free Granola

We met a great gluten free friend, Paula, at the WNY Celiac Walk in May.  She shared her recipe for gluten free granola and we had to share it with you.  We love gluten free granola to put on yogurt, sprinkle over fruit, or plain!  Read on for the recipe…

 

Gluten Free Ingredients & Preparation:

 

6    cups gluten free oats (Paula uses Montana Monster quick oats)
1 ½ cups chopped pecans
¾   cups  sunflower seeds (unsalted)
½   cup rice bran
¼   cup ground flax seed
¾   cups brown sugar
1 ½ tsp cinnamon
1    tsp salt

 

Mix the above ingredients & set aside

 

¾ cup sunflower or canola oil
¾ cup water
¾ tablespoon honey
1 ½ tsp vanilla

 

Mix the liquids together and add to the dry ingredients. Spread on ungreased cookie sheets so the granola is in one layer.
Bake at 300 °, turning occasionally until brown. (I turn every ten minutes in the beginning and then every five until I get the granola the way I want it. (tip:  lighter granola = chewy; darker granola = crunchy). 

 

After the granola has cooled, add:
1 ½ cups raisins
1    cup dates
Store in an airtight container.
