We love this time of year for many reasons, but most of all for the BBQs. We asked many of our Facebook and Twitter friends to tell us their favorite gluten free BBQ treat. Today, we thought we’d share our recipe for gluten free pasta salad… a staple in our house and a family favorite!
Ingredients:
1 package gluten free pasta (Our favorite is Bi-Aglut Fusilli).
1 bottle gluten free salad dressing (We love Oliv White Balsamic Vinegar Dressing)
2 cucumbers, peeled and cut into small sections
2 carrots, peeled and grated
1 package cherry or grape tomatoes, cut into quarters
1 head of broccoli, cut into bite size pieces
1 package pepperoni (Hormel pepperoni is currently listed as gluten free)
Preparation:
Cook gluten free pasta according to directions on box. We like to slightly undercook the gluten free pasta. Drain gluten free pasta and rinse with cold water. Set aside to cool.
Prepare vegetables as described above or just dice into bite sized pieces.
Add prepared vegetables to gluten free pasta and mix well. Add gluten free salad dressing to gluten free pasta and vegetables and mix well. Finish by adding pepperoni slices.
