This easy to make, gluten free red pepper cream sauce is the perfect topping for any gluten free meal including fish, chicken, pasta, fajitas and more. Ingredients:
3 red bell peppers
1-2 cups heavy cream
1/2 cup grated Parmesan or Romano cheese
1 teaspoon olive oil
1 teaspoon ground pepper
1 teaspoon salt (optional)
2 tablespoons of minced garlic
2-4 tablespoons of butter
1/4 cup of basil
1 pound meat (de-veined and peeled shrimp, de-tailed optional, chicken and/or pasta.
Optional Ingredients:
mushrooms, Cajun seasoning, jalapenos
Direction:
coat red bell peppers with olive oil. Broil peppers until skin begins to have black spots. Take peppers out of broiler and de-skin them. A simple knife slice should allow skin to pull off easily. Remove seeds and stem. Should you want to wait for the peppers to cool, place them in a resealable container (plastic bag or Tupperware) for roughly a half-hour. I prefer to cut them while hot.
Place peppers in blender. Add olive oil and 1/2 cup of heavy cream. Purée until a thick liquid texture is reached.
Pour pureed peppers into sauce pan over medium heat. Stir in heavy cream (amount depends on desired thickness), Parmesan or Romano cheese and spices. Add butter to achieve desired taste. Pour over shrimp and/or pasta, chicken or fish and enjoy.

Yum this sauce was super delicious. We used it to spice up some chicken and boy did it do the trick. It was a great gluten free recipe that everyone really enjoyed. We will definitely be making this one again. Thanks!
