Ingredients:
8 to 12 large plump dried figs
2 to 3 ounces Brie, cut into small pieces
2 teaspoons extra virgin olive oil
1 tablespoon fresh rosemary leaves
Sea salt, to taste
Ground pepper, to taste
Preparation:
If figs are very dry, plump them in boiling water for 5 to 10 minutes. Drain and cool. Trim stems and make a slit in the side of each fig. Push a piece of Brie into each fig. Place in a bowl and toss gently with olive oil, rosemary, salt and pepper. Serve at room temperature or heat in a 350°F oven until warm and cheese melts, about 8 minutes.
